2 tbsp olive oil
1 small onion, chopped from

3 cloves garlic, finely chopped from

1 celery stalk, finely chopped from

1 zucchini, cubed from

1L chicken bone broth from

500ML water
½ cup soup pasta from

½ roast chicken from Chicken George
2 cups spinach leaves from

½ bunch parsley from

Method
- Heat the oil in a large saucepan over high heat. Add the onion, garlic and celery and cook, stirring, for 4–5 minutes or until soft.
- Add the stock and water and bring to the boil. Add the pasta and zucchini and cook for 5 minutes or until just starting to soften.
- In a food processor, blitz the parsley, lemon juice, garlic and olive oil until it forms a paste. Put aside in a bowl.
- Carve the hot chicken into bite sized pieces.
- Remove soup from heat and stir through the spinach. Add in the chicken and mix.
- Sprinkle it with pepper and gremolata and divide between bowls to serve. Serve with crusty baguette.
