Green Chicken Minestrone with Gremolata is a hearty and nutritious soup featuring tender chicken, fresh green vegetables, and pasta simmered in a flavorful broth. The addition of a vibrant gremolata, a zesty mix of lemon zest, garlic, and parsley, adds a burst of fresh flavor to each bowl. Ingredients

2 tbsp olive oil
1 small onion, chopped from Panetta Mercato
3 cloves garlic, finely chopped from Panetta Mercato
1 celery stalk, finely chopped from Panetta Mercato
1 zucchini, cubed from Panetta Mercato
1L chicken bone broth from GoVita
500ML water
½ cup soup pasta from Panetta Mercato
½ roast chicken from Chicken George
2 cups spinach leaves from Panetta Mercato
Sourdough baguette, to serve from Bakers Delight

Gremolata

½ bunch parsley from Panetta Mercato
1 clove of garlic from Panetta Mercato
1 tbsp Extra Virgin Olive Oil
Juice of ½ lemon from Panetta Mercato

 

Method
  • Heat the oil in a large saucepan over high heat. Add the onion, garlic and celery and cook, stirring, for 4–5 minutes or until soft.
  • Add the stock and water and bring to the boil. Add the pasta and zucchini and cook for 5 minutes or until just starting to soften.
  • In a food processor, blitz the parsley, lemon juice, garlic and olive oil until it forms a paste. Put aside in a bowl.
  • Carve the hot chicken into bite sized pieces.
  • Remove soup from heat and stir through the spinach. Add in the chicken and mix.
  • Sprinkle it with pepper and gremolata and divide between bowls to serve. Serve with crusty baguette.
